Chef Joe in action. Image courtesy of The Founding Farmers Cookbook.
We interrupt this Tabletop Tuesday to give a sincere shout out to an acclaimed executive chef, great dad and husband, and all-around good guy. Joe Goetze, we're talking about you. Cheers to staying young in your old age. The POSH fam couldn't be prouder. We wouldn't pass up a meal with you any day. Happy Birthday!

We love hearing stories about Joe. From these tales, we've learned never to ask to be his assistant in the kitchen unless we have a strong knowledge of serious cooking ingredients. Jami was once asked to get flour from their pantry, but once she found them, there were about ten different kinds to choose from. Needless to say, he sticks to cooking and she sticks to tabletop. Sounds like the perfect couple to host an excellent dinner. We also live for when she brings his leftovers to work. Fortunately, now we can try to recreate his magic with the The Founding Farmers Cookbook. We already have our copy but would love to share more with you. Read and excerpt below from The Founding Farmers Cookbook and get your own copy on Amazon.

Meet Executive Chef Joe Goetze
"There's an intimacy to cooking," says Goetze, who is known around the restaurant as Chef Joe. "It's up close and personal." That's way he crafted a menu for Founding Farmers full of what he calls "food that hugs you."...Throughout a notable career heading up kitchens around Dallas, including eatZi's Market & Bakery, Sipango, and The Landmark, he was know for always striving to get his food just right. That mean making sure the ingredients were sustainably sources, were local whenever possible, and fit his strict quality guidelines. It's all about building unforgettable flavors that make you want to come back again and again.

Toast: Chef Joe Goetze

Wednesday, August 1, 2012
Today's Toast goes out to one of our top chefs, Joe Goetze. As Corporate Chef VSAG, a National Restaurant Advisory Group, and Corporate Chef for Founding Farmers Restaurant Group Joe develops their recipes, leads the culinary team, researches ingredient sourcing and develops the produce and purveyor partnerships. No easy feat! Joe has worked all over the country, but if you're from Dallas you may know him from his time spent at various great restaurants, from his humble beginnings with many of his great chef friends at The Landmark to culinary operations at eatZi's Market & Bakery. His decades of experience and hard work has paid off at Founding Farmers, which just earned the Washington D.C. restaurant Power Spot 2012 RAMMY.* The RAMMY describes it as "a top choice member restaurant, a spot to 'see and be seen' with the movers and shakers on the national and local political and business scene. It best exemplifies 'how Metropolitan Washington works.'" Joe believes in running a green and sustainable operation that brings quality natural ingredients straight from the farm to the tabletop. A man after our own hearts! In fact, we love him so much one of POSH's own has been married to him for 18 years. Bet you can guess who!

Chef Joe dished out five of our tasty favorites on POSH's classic Catering Collection.

1. Tunapoke | 2. Root Beer Braised Sticky Pork Ribs | 3. NY Sour RGB | 4. The Famous Deviled Eggs (You can't eat just one!) | 5.Fried Green Tomatoes with Local Goat Cheese Herb Spread + Green Goddess

Chef Joseph Goetze with Joseph Goetze, Jr. Happy belated birthday to Joe Jr. He turned 16 this Monday, July 30th.

*The RAMMY Awards Gala is an annual industry event and fundraiser for the Restaurant Association Metropolitan Washington that recognizes the best and brightest in the restaurant industry in the metropolitan Washington, DC region.
